The four enemies of fresh coffee
- Oxygen makes the oils go stale.
- Light speeds up the breakdown of flavor compounds.
- Heat makes everything age faster.
- Moisture dulls flavor and can spoil coffee.
The best way to store beans
- Keep them in an airtight, opaque container, or in the original bag if it has a one-way valve and a reliable seal. Squeeze out the extra air before closing.
- Place it in a cool, dark cupboard. Avoid the space next to the stove, the coffee machine or a sunny window.
- Buy whole beans, and grind only what you need for each brew.
Should you freeze coffee?
Do not keep opening a bag in the fridge or freezer, because moisture condenses on cold beans every time you take them out, and coffee also picks up other food odors. Freezing can be useful if you have a large amount you cannot finish. Divide it into small, airtight portions, take out only what you will use, and never refreeze it. Let the bag warm to room temperature before opening.
How long does coffee stay fresh?
Freshly roasted coffee releases carbon dioxide for several days. Many people find filter coffee tastes best from about 3–5 days after roasting, and espresso after about a week. Flavor is strongest for around four to six weeks, and it then fades gradually. Coffee past that point is not unsafe, it is simply duller.
Ground coffee stales much faster, often within a couple of weeks.
Simple habits
- Check the roast date on the bag, not just a best-before date. Read more in how to read a coffee bag.
- Buy amounts you will finish within two to three weeks.
- Set up a coffee subscription so a fresh bag arrives before the last one runs out.
Do vacuum containers help?
A vacuum or one-way valve canister can slow staling a little by limiting oxygen, but it is more important to keep coffee cool, dark and sealed. A simple opaque jar in a cupboard works well if you use the coffee quickly.
How to tell coffee has gone stale
Stale coffee smells faint or papery, the bloom is weak and the cup tastes flat, dull or cardboard-like. It is safe to drink, but it will not show what the coffee can do. If your coffee is older, cold brew and milk drinks hide the loss of flavor better.
Common questions
Can I leave beans in the original bag?
Yes, if the bag reseals well. Press out the air and fold it tightly, or clip it. Put it in a cupboard rather than on the counter.
Is a clear glass jar okay?
Only if you store it in a dark cupboard. Light damages coffee, so an opaque container is better on a shelf or worktop.
How much coffee should I buy at once?
Buy an amount you will finish in two to three weeks. If you drink a bag more slowly, choose a smaller bag or a subscription.
